Mashed Cauliflower

Some people call this Mashed Faux-tatoes but I prefer to call it what it is.  I was never a huge fan of cauliflower and I absolutely love this.  It’s really the only way I eat it.  And guess what, my kids actually eat it too.  It is so simple it seems silly to even call it a recipe.  This is my kind of food- quick, easy, and tasty.

1 head cauliflower

Organic butter to taste (I use about 2-3 tablespoons)

Sea Salt to taste

A little bit of almond milk, rice milk, or regular milk (preferably raw) just to get it to the right consistency and to get it to mix in the blender.

A little squeeze of lemon juice (optional)

Lightly steam the cauliflower and then put everything in the blender or Vitamix.  Blend it to your desired consistency.  My kids prefer that it have no “lumps” but you don’t want to over mix and make it watery.
